Summertime is here again and what would Summer be without some delicious garden related treats? We’ve been waiting all year to have some delicious strawberries and it’s finally time to enjoy them. Below is our latest culinary adventure, inspired by a popular Pinterest photo of a tasty looking Cheesecake stuffed strawberry. The finished product is nothing short of fantastic. A word to the wise: double up on your ingredients. You’ll be sorry if you don’t!

There are a multitude of different recipes to be found on the internet if you search for “Strawberry Cheesecake Bites.” The following is one of the simplest and most elegant, from the tasty and inspiring NutmegNanny.com blog. Someone’s even made a video demonstration! We sprinkled the graham cracker crumbles over the tops of the strawberries, rather than dipping them, just because we liked the way it looked more.

Cheesecake Stuffed Strawberries

Ingredients
1 pound large strawberries
8 ounce block cream cheese – softened
3 – 4 tablespoons powdered sugar (depends on how sweet you want the filling)
1 teaspoon vanilla extract (or use almond, lemon, etc.)
Graham cracker crumbs

Directions
Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out inside with a paring knife if necessary. I found most of the strawberries already had a nice hollow center so that step was not necessary. If you want to stand your strawberries upright (like in the picture) slice a bit off the bottom. One strawberries are prepped set aside.

Combine cream cheese, powdered sugar and vanilla with a mixer or by hand. Add cream cheese mix to piping bag and fill strawberries. Once strawberries are filled dip the top in graham cracker crumbs. Devour and fall in love.

You could also drizzle or dip strawberries in chocolate if desired.

I stored my stuffed strawberries in the fridge although I find they taste best the day,or second after, they are made.
